Ingredients for Microwave Pumpkin Mug Cake

Ingredients & Equipment

All of the ingredients for this recipe should be pretty familiar but you may not have some of the seasonal ones in your pantry yet!

Here’s the simple shopping list for this mini pumpkin pie:

  • Graham cracker crumbs
  • Egg
  • Milk
  • Brown sugar
  • Pumpkin puree
  • Pumpkin pie spice
  • Vanilla extract
  • Whipped cream for topping (optional)

You can get exact measurements for these ingredients in the printable recipe card at the bottom of the page.

You’ll also need a few items from the kitchen, including:

This recipe make a single serving, requires about 3 minutes of prep time, and 2 minutes of cook time. That’s less dessert in about 5 minutes total time!

Start with a microwave-safe mug.

Add the graham cracker crumbs to the bottom of your mug to make the pie crust.

In a separate bowl, combine the remaining ingredients (egg, milk, brown sugar, pumpkin puree, pumpkin pie spice, and vanilla) together. Stir or whisk until well mixed. (I recommend using a small whisk to get a creamier texture.)

Pour the mixture over the top of the graham cracker crumbs in the mug.

Cook on high for 1 1/2 to 2 minutes, until the pumpkin mixture is set.

Allow to cool for a few minutes, then top with whipped cream and serve.

Toppings & Mix-Ins

You can personalize your pumpkin pie mug cake by changing up the toppings or adding mix-ins.

Try some of these topping ideas:

  • Sprinkle of cinnamon
  • Caramel drizzle
  • Drizzle of maple syrup
  • Toasted pecans
  • Vanilla ice cream

You can also mix ingredients into your pumpkin mix before you cook it in the microwave. Try one of these mix-in ideas:

  • Chocolate chips (milk chocolate or white chocolate)
  • Chopped nuts
  • Dried fruit

You can also make this recipe without the crust for more of a microwave pumpkin custard.

Pumpkin Pie in a Cup

Storage & Leftovers

This pumpkin pie in a cup is best served right away. There’s nothing like warm pumpkin pie!

If you don’t want to eat it right away or you’re preparing it ahead of time, this microwave mug dessert can be stored in an airtight container in the refrigerator for up to 24 hours.

How do I ensure my mug pie has the perfect texture?

Mix the ingredients thoroughly to avoid lumps and ensure even cooking.  You also want to make sure you microwave it for the right amount of time. Overcooking it can make it rubbery, while undercooking may leave it too moist or gooey.

Can I substitute individual spices for pumpkin spice mix?

Yes, you can use a combination of cinnamon, nutmeg, and cloves if you do not have pumpkin spice mix.

Can I use fresh pumpkin puree instead of canned?

Homemade fresh pumpkin puree can be used in place of canned puree. Make sure that it’s well-blended and smooth to get the best texture in your mug cake.

What can I use if I don’t have a microwave-safe mug?

You can use any microwave-safe dish that is similar in size to a mug. Make sure it’s large enough to allow the mixture to rise without overflowing.
