You can make pumpkin pie in a cup any time you find yourself craving those rich fall flavors. It’s ready in just minutes! 

If you’re craving pumpkin flavor, you could make a pumpkin mug cake recipe, but this recipe features a graham cracker crust that gives it more of a pie vibe. It’s the perfect sweet snack once the cooler weather hits!

All of the ingredients for this recipe should be pretty familiar but you may not have some of the seasonal ones in your pantry yet!

  • Graham cracker crumbs
  • Egg
  • Milk
  • Brown sugar
  • Pumpkin puree
  • Pumpkin pie spice
  • Vanilla extract
  • Whipped cream for topping (optional)

This recipe make a single serving, requires about 3 minutes of prep time, and 2 minutes of cook time. That’s less dessert in about 5 minutes total time!

Start with a microwave-safe mug.  

Add the graham cracker crumbs to the bottom of your mug to make the pie crust.

In a separate bowl, combine the remaining ingredients (egg, milk, brown sugar, pumpkin puree, pumpkin pie spice, and vanilla) together. Stir or whisk until well mixed. (I recommend using a small whisk to get a creamier texture.)

Pour the mixture over the top of the graham cracker crumbs in the mug.

Cook on high for 1 1/2 to 2 minutes, until the pumpkin mixture is set.

Allow to cool for a few minutes, then top with whipped cream and serve.

Toppings & Mix-Ins

You can personalize your pumpkin pie mug cake by changing up the toppings or adding mix-ins.

  • Sprinkle of cinnamon
  • Caramel drizzle
  • Drizzle of maple syrup
  • Toasted pecans

Ingredients

  • 2 tablespoons graham cracker crumbs
  • 1 egg
  • 1 tablespoon milk
  • 2 tablespoons brown sugar
  • 1/3 cup pumpkin puree

Instructions

  • Add the graham cracker crumbs to the bottom of your mug.

  • In a small bowl, combine the egg, milk, brown sugar, pumpkin puree, pumpkin pie spice, and vanilla. Whisk until mixed.

  • Pour the mixture into the mug over the top of the graham cracker crumbs.
