Nothing says Christmas like the smell of gingerbread! But who needs more cookies in December? Instead we make these pretty healthy gingerbread waffles with healthy pumpkin, molasses, and just a little brown sugar and butter. My kids go nuts over this gingerbread waffle recipe that we make into gingerbread looking waffles they can decorate with candy or fruit for a fun christmas activity too! You will love this yummy Christmas breakfast recipes!
All you need are a couple of common household items tomake this December breakfast dish!
Start by preheating your waffle iron. You can make these in a traditional waffle iron, but we like to make it in this seasonal gingerbread man waffle maker !)
In a large bowl combine the dry ingredients: 3 cups flour, 4 teaspoons baking powder, 2 teaspoons cinnamon, 2 teaspoons ginger, 1/2 teaspoon nutmeg and 1/2 teaspoonsalt.
In a medium bowl combine the wet ingredients by beating the 4 large eggs and 2/3 cup packed brown sugar until fluffy. Now carefully beat in the 1 cup canned pumpkin, 1 1/4 cup milk, 1/2 cup molasses and 1 stick of melted butter.
Stir the wet ingredients intothe dry ones until just moist. Do not overstir the waffle batter.
Laddle waffle batter into irons and bake according to manufactures directions.
These gingerbread waffles will start filling your house with the wonderful smell of Christmas! You just may have some helpers to set the table with they smell what is coming!
Serve hot waffles with choice of toppings.
These are so satisfying with the perfect combination of flavor. Plus they don’t have a lot of sugar so you won’t crash mid-morning!
You can serve them with fruit, in the gingerbread mold, or my favorite way – with warm maple syrup with compliments the pumpkin and gingerbread spices perfectly!
