I love desserts all year long. But in the summer I am wanting something light and refreshing. So instead of baked treats, I opt for fresh fruit, ice cream desserts, or refrigerated desserts like this summer berry icebox cake! This summer strawberry dessert is like strawberry shortcake meets an oreo cookie on ice! My kids can’t get enough of this light summer strawberry dessert and it always impresses guests. If I haven’t convineced you yet, just look at the pictures of this best summer dessert…yummy, right?!

All you need are a couple ingredients to make this quick strawberry dessert!

• 4 cups strawberries
• 1/4 cup lemon juice
• 15 oreo cookies
• 14 oz sweetened condensed milk
• 12 oz cool whip (or we use the more natural Tru Whip)
• 2 tablespoons butter, melted

Start by lining an 8×4 loaf pan with foil or parchment paper.

Mash 2 cups strawberries in bowl

Light summer strawberry desserts

Add the condensed milk, lemon juice, and 3 cups cool whip.

Mix well until combined.

Pour into the lined pan.

In a food processor, mix melted butter and oreo cookies.

Frozen Dessert

Press the Oreo cookie mixture on top of the cool whip mixture.

HINT: You are making your dessert upside down!

Freeze for at least 6 hours. Serve by inverting the pan onto a serving plate and removing foil or parchemnt paper.

Cuisine summer

• 4 cups strawberries plus extra to garnish
• 1/4 cup lemon juice
• 15 chocolate sandwich cookies (Oreo type)
• 14 ounces sweetened condensed milk
• 12 ounces cool whip or tru whip plus more for frosting
• 2 tablespoons butter melted

• Line 8×4 loaf pan with foil or parchment paper.

• Mash 2 cups strawberries in a medium bowl, add condensed milk, lemon juice, and 3 cups cool whip. Pour into pan.

• In food processor mix melted butter and oreo cookies.

• Press on cool whip mixture. (you are layering the dessert upside down)

• Freeze 6 hours. Serve by inverting onto plate and removing foil. Frost with additional cool whip if you like and additional sliced strawberries.
